A marvellous combination of a fresh goat’s cheese and a very special Portuguese fig. The fig is added to the curdled goat’s milk whole at the point of moulding, thereby encasing it in the cheese. When the cheese is cut, this beautiful fig can be found right in the centre. On tasting, you will be blown away by the sublime combination of the acidity of the goat’s cheese and the sweet taste of the fig with notes of honey. It is a "Pingo del Mel" fig, which literally means flavour of honey. It is a late variety of fig harvested in August. It is very sweet with very fine seeds. The harvested fig is boiled for 20 to 30 minutes, then candied for 3 months. This fig originates from the northeast of the Alentejo region in Portugal, a region that is well-known for its olives, wine, Iberian hams and, of course, for its figs
