This delicate, fresh soft cheese made from goat’s milk stems from the region of Gerona. Only the milk of the Granadina breed of cow is used. It is an artisanally made delicacy on whose rind mould forms very quickly. After 45 days of ripening, the Garrotxa has a delicate, tartish flavour with subtle notes of nuts, mushrooms and goat’s milk
