This Goat's Gouda is ripened in the warm cellars for 3 months. They are rinsed twice a week during ripening and form their natural rind which is rubbed with caramel at the finish. This gives it a particularly attractive appearance. After ripening for 3 months the cheese emerges with a spreadable texture and mild flavour.
