Mahon-Menorca is a DOP cheese since 1985 and is made on the island of Menorca, east of Spain in the Balearic islands. Mahon-Menorca is made with milk from Menorcan cows. These special cheeses are then shaped in a thin cotton canvas called “fogaser“: held at the four corners by a cord, the cheese is then pressed, the folds of the canvas are imprinted on the surface of the cheese creating a distinctive look. Spicy, slightly acidic and salty taste with a milky note.
